Before the rise of modern manufacturing, in the 19th century, sugar was rare and used sparingly. After extensive research and many hours devoted to studying traditional Calisson d’Aix recipes, we created our ideal version, which we named the Calisson de Saint-Rémy. The result of this passionate work is a tender, flavorful, and delicately sweetened treat. Every day, these sweet delicacies are handmade in a dedicated workshop, where the dough is prepared with meticulous attention.

The secret to the calisson’s tender texture lies in the careful craftsmanship at each stage.
